Steamed Layer sweet cake / Khanom Chan

Ingredients:
– 1 cup tapioca flour
– 1/2 cup rice flour
– 1/2 cup arrowroot flour
– 1 1/2 cups coconut milk
– 1 cup sugar
– 1 cup water
– 1/2 teaspoon pandan extract (or natural pandan juice)
Instructions: 
1. In a pot, heat coconut milk, water, and sugar until dissolved. Let cool.
2. In a large bowl, mix all flours together. Slowly pour in the coconut milk mixture while stirring until smooth.
3. Divide the batter into two portions. Mix pandan extract into one portion for a green layer.
4. Grease a small square pan and place in a steamer. Pour a thin layer of white batter and steam for 5 minutes.
5. Pour a thin layer of green batter and steam for another 5 minutes. Repeat the process until all batter is used.
6. Once fully cooked, let it cool completely before cutting into bite-sized squares.
